Can You Freeze Galangal? What Thai Cooks Say and How to Do It

can you freeze galangal

You can freeze galangal, and many cooks do, but it is not free. Galangal is the rhizome of Alpinia galanga, a member of the ginger family,1 also sold as Thai or Siamese ginger.2 Two Thai cooking writers disagree on how much freezing costs it. Leela of SheSimmers finds that freezing changes its taste, aroma and texture “quite a bit” and does not recommend it,3 while Pailin Chongchitnant of Hot Thai Kitchen says frozen galangal will work in tom yum when fresh isn’t available.4 Both positions are below, followed by how to freeze it if you decide to.

At a glance

QuestionShort answer
Can you freeze it?Yes. Whether you should depends on the dish (see below).34
What changes? One cook finds thawed galangal spongy, tea-like in aroma and a bit bitter.3
Best use for frozenCurry paste, by Leela’s account; Pailin also accepts it in tom yum.34
How long frozen?Waitrose: up to 2 months, unpeeled and wrapped in foil. No other published figure found.5
Fresh, in the fridgeLeela: almost two weeks in the crisper, wrapped; Waitrose: 2 to 3 weeks.35
At room temperatureA Thai study gives fresh galangal a marketable life of 7 days.6

Does frozen galangal taste the same?

This is where the sources split.

SourcePosition on frozen galangal
Leela, SheSimmers3Freezing alters taste, aroma and texture “quite a bit.” Thawed, it becomes spongy, tea-like in aroma and a bit bitter. Still usable in a curry paste, but detrimental to a dish like tom yam. She does not recommend freezing.
Pailin Chongchitnant, Hot Thai Kitchen4In her tom yum recipe: frozen or dried galangal will work as a substitute for fresh.

We have not tried to settle this. The two are not quite answering the same question: Leela is comparing frozen with fresh, while Pailin is offering frozen as a fallback when fresh isn’t available, and is firm that ginger is not a substitute.4 In practice, fresh galangal is best where it is the lead aroma in a clear soup; frozen galangal is a reasonable stand-in, and its losses matter least when it is pounded into a paste with other strong aromatics. That last point is our reading of Leela’s advice, not a tested finding.

Freeze it, or keep it fresh?

Galangal does not last long at room temperature. A 2022 Thai postharvest study took 7 days as the marketable life of fresh rhizomes at room temperature, then tested whether hot-water dips and packaging could extend it in storage at 13°C and 85% relative humidity, for up to 36 days.6 Those are trade storage conditions, not a home figure.

In a home refrigerator, Leela wraps fresh galangal in a double layer of paper towel and puts it in a plastic bag; she says it stays fresh in the vegetable crisper for almost two weeks.3 Waitrose gives 2 to 3 weeks in the fridge.5 If you will use it within that window, the refrigerator avoids the texture change. How to freeze galangal

Whole or in chunks. Waitrose’s method is to wrap unpeeled galangal in foil and freeze it, for up to 2 months.5 Cutting it into recipe-sized pieces first means you only take out what you need (common practice).

Thin slices. Leela notes galangal can be sliced thin and frozen for longer storage, though she does not recommend freezing it.3 Slices are the convenient form for soups such as tom yum, where Pailin’s recipe uses galangal sliced and notes it is traditionally left in the soup as garnish.4 Bag the slices in portions.

Grated or pounded. Galangal is hard and fibrous,7 and cooks commonly pound or grind it into a paste rather than grate it. Portion the paste into an ice cube tray or into small mounds on a lined baking sheet, freeze, then bag the frozen portions. This is a Method suggestion, not a sourced recipe. It suits the use Leela says frozen galangal is still good for: curry paste.3

Label and date the bag. USDA’s Food Safety and Inspection Service says food kept constantly at 0°F stays safe and that long freezer storage affects only quality,8 so the time limit is about flavor.

Common claims we could not confirm

  • “Frozen galangal lasts up to nine months.” No source found. The only published figure we found is Waitrose’s 2 months.5
  • “Galangal has a long shelf life at room temperature.” The Thai storage study used 7 days of marketable life at room temperature as its baseline.6
  • “Leaving the skin on preserves flavor and nutrients.” No source found. Waitrose freezes it unpeeled but gives no reason.5
  • “Thaw for 20 minutes and the skin peels off with a spoon” and “frozen galangal grates more easily.” No galangal-specific source found. America’s Test Kitchen reports this for ginger (see can you freeze ginger?); we have not assumed it carries over to galangal, which is harder and more fibrous.7

Not yet measured

  • How long frozen galangal keeps its aroma.
  • Whether whole, sliced or pasted galangal freezes best.
  • Any controlled taste comparison of fresh and frozen galangal. The disagreement above rests on two cooks’ experience.
