Too Much Parsley? Fixes, and a Note for Warfarin Users

too much parsley

Parsley is mild in small amounts, but too much of it can push a dish toward a grassy, bitter taste. It is also one of the easier herbs to rescue, because it often goes in as whole leaves, a garnish or part of a tied bundle. One thing is different about parsley: in quantity, it matters for people taking the blood thinner warfarin. That’s covered at the end.

Why it turns bitter, and which parsley you used

Flat-leaf parsley is the stronger of the two common types: the PROSEA plant reference describes it as stronger flavored than curly-leaved parsley.1 The same reference describes parsley herb oil as warm in flavor but slightly burning and bitter.1 Its main volatile compounds vary by type. In the German samples PROSEA reports, flat-leaf parsley oil was led by 1,3,8-p-menthatriene and limonene, while curly parsley oil was led by myristicin.1 If you swapped flat-leaf for curly at the same volume, you used the stronger herb. More in Italian parsley vs. curly parsley.

Caught early: take it out

Garnish. Pick some leaves off the plate or platter.

A bouquet garni. If the parsley went in as part of a tied bouquet garni, pull the bundle out early. Making herbs easy to pull out is what the bundle is for.

Chopped parsley in a liquid. Skim it off with a slotted spoon, or pour a soup or sauce through a strainer and return the liquid to the pot.

Sheer volume: too much parsley for the dish

Dilute. Add more of every ingredient except parsley. A soup is the easiest case: add more stock, then re-season with the other herbs and spices in the recipe. A stew or marinara works the same way; for marinara, add more tomato. If adding to the pot isn’t practical, Tasting Table suggests (for garlic) making a second batch without the overdosed ingredient and combining the two.2 The arithmetic is the same for parsley.

Add dairy where it belongs. If the dish already has cream, butter, yogurt or cheese in it, a little more adds bulk and a mild richness that softens the overall impression. Treat this as kitchen judgment: we found no source showing that dairy neutralizes or binds parsley’s flavor compounds.

Add a competing flavor. A few slices of jalapeño or some red pepper flakes in a marinara, or more garlic in a dish that already uses it, give the palate something else to register. These mask rather than reduce the parsley, and each adds its own flavor, so go a little at a time.

Bitter edge

In controlled taste tests with pure solutions, sweet tastes and sodium salts suppressed bitterness, and citric acid was the weakest suppressor.3 That is a laboratory result, not a test on parsley, but it points to a pinch of salt or a little sugar or honey, added in small amounts and tasted between additions.

Cooking it out

LSU AgCenter lists parsley among the delicate herbs best added a minute or two before the end of cooking, because prolonged heat causes flavor and aroma losses.4 That supports simmering a soup or sauce a few minutes longer to soften too much fresh parsley, which is most useful when the parsley is too finely chopped to strain out. We found no test of how long that takes.

When it’s not too much

In some dishes parsley is a main ingredient rather than a seasoning: tabbouleh, chimichurri, gremolata, salsa verde. In those, a strong parsley flavor is the point, and “too much” is a matter of taste. If one of these tastes bitter, the bitterness fixes above still apply.

A note for people taking warfarin

MedlinePlus, the National Library of Medicine’s consumer health service, lists parsley among the foods that can change the way warfarin works.5 Its advice is not to avoid these foods, but to eat only small amounts and, at the least, not to change how much you eat from day to day or week to week.5 A large bowl of tabbouleh or a plate heavy with parsley sauce is the kind of change worth mentioning to whoever manages your prescription.

Preventing it next time

Add fresh parsley at the end, or at the table. LSU AgCenter suggests adding delicate herbs in the last minute or two of cooking or sprinkling them on just before serving.4

Tie it up. Parsley stems in a bouquet garni can come out whenever the dish tastes right.

Convert carefully from dried. LSU AgCenter’s rule of thumb is one teaspoon of crumbled dried herb for one tablespoon of fresh.4 See fresh parsley vs. dried.
